No more broken yolks! My over-easy eggs slide right out of the pan leaving nothing but a bit of butter behind. The pan cleans up easily and leaves no evidence of being used at all. If anything changes, I’ll update this review.I’m using this to replace a Teflon pan that has a compromised surface despite my never using metal or other hard utensils. Though I still use only wood, plastic, or silicone utensils, it’s nice to know there won’t be any unhealthy chemicals leaching into my food.The pan weighs about the same as Teflon pan which also has a stainless steel heat base.I have large hands and prefer the larger plastic handles of my pans that don’t go in the oven. I’m not sure if the ability to put the pan in the oven is worth the sacrifice.The pan does have a bump on the handle to indicate not to hold the handle closer to the pan to avoid burns. I feel like I want to put my forefinger in front of it. I’ll have to conciously think about it until it becomes habit.I don’t have experience with any other ceramic pans so I can’t say whether it’s worth spending the very high price for this pan. I’ll do more research when I’m looking for more pans.
